The first Micro-lot release for Birch. We're incredibly excited to be able to showcase this experimental processed Pink Bourbon, which has been grown and harvested by Jefferson Adrian Motta, on his farm in Huila, Colombia.
Process includes:
- - Initial fermentation for 24 hours
- - 48 hour co-ferment
- - pH controlled anaerobic ferment
- - Washed at 20℃
- - Sun-dried for 8-12 days
